If you are sometimes a lazy wife like me you will love this recipe. I love crispy chicken but I don’t like to have it fried because it is so unhealthy. Also, frying involves coating, breading and monitoring chicken on hot oil which isn’t fun and conducive to laziness.
I make this toaster oven chicken very often because it really easy and it allows me to procrastinate on Facebook while cooking. Here is how I make crispy toaster oven chicken in 60 minutes:
1. Season chicken
I season chicken using vinegar, shadow beni, garlic, salt, black pepper, cayenne, paprika, chilli powder, grated ginger, cilantro, onion, and a dash of Angostura aromatic bitters. You can use any seasoning you have in your fridge, pantry or kitchen garden. Due to my laziness, I don’t season chicken overnight because I have no foresight in meal preparation. Kudos to you if you do! I leave it to marinate for 30 minutes in the fridge.
2. Arrange on grill
Place the seasoned chicken on the grill on top the drip pan. Do not place the chicken in the drip pan because it will bake in the chicken oil and not get crispy.
Bake for twenty minutes on each side on 350 F. I flip the chicken with pair of tongs.
Put timer on toast setting and toast chicken for ten minutes on each side to achieve crispiness. I sprinkle with dry parsley for a garnish.
I serve it with a sweet mustard sauce. By that I mean some ketchup, BBQ sauce, mustard and pancake syrup mixed in a bowl.
